Pressure Cooker Poached Eggs With Bell Pepper

Hot chips
  • Preparation time: 3 - 5 minutes.
  • Time to cook: 10 - 20 minutes.
  • Servings: 2 persons

Ingredients

  • 2 eggs, refrigerated.
  • 2 bell peppers.
  • 2 slices toasted white bread.
  • 2slices smoked Gouda or mozzarella.
  • 1 bunch rucola.

Mock Hollandaise Sauce

  • 2/3Cup mayonnaise.
  • 3/2tsp. mustard.
  • 3tsp orange juice.
  • 1tsp lemon juice, fresh.
  • 1tsp wine vinegar.
  • 2/3tsp. salt.
  • 1tsp turmeric.

Method

  1. Blend all the ingredients for Hollandaise sauce together until perfectly smooth. Refrigerate the mixture overnight.
  2. Prepare you pressure cooker by adding 1cup of water, steamer basket and set it aside.
  3. Slice off the ends of the bell pepper to form bell cups. Break the eggs in the bell cups and cover using a foil paper.
  4. Place in the steamer basket, replace the lid of the cooker and cook on low for 3-5minutes.
  5. Before serving, put the bread, rucola, cheese and the bell cups, cover with generous amount of hollandaise sauce.

Pressure Cooker Teriyaki Chicken

  • Preparation time: 10 - 15 minutes.
  • Time to cook: 40 - 50 minutes.
  • Servings: 8 persons

Ingredients

  • 3/4Cup brown long grain rice.
  • 3/4Cup soy sauce, reduced-sodium.
  • 1/4Cup apple cider vinegar.
  • 2 tsp. ginger, ground.
  • 2tsp garlic powder.
  • 1 tsp. black pepper, ground.
  • 1 (20oz) can pineapple, crushed.
  • 1 (20oz) chicken stock.
  • 3 pounds skinless chicken thighs, boneless.

Method

  1. Mix all the ingredients (except the chicken thighs) in a separate bowl. Stir until all the solid ingredients are completely dissolved.
  2. Put the chicken thighs in a pressure cooker and add the sauce mixture. Stir until the thighs are completely coated. Cover and cook on high pressure for 20 minutes.
  3. Using the rapid-release method, release the pressure from the cooker. Put the chicken into a serving dish and cover with foil paper.
  4. After about 3 minutes, serve with teriyaki sauce..

Chicken Piccala

Ingredients

  • 6 chicken breasts, halved.
  • 1/2Cupflour.
  • 1/4Cup olive oil.
  • 4 shallots.
  • 3medium size garlic cloves, minced.
  • 3/4Cup chicken broth.
  • 1/3Cup lemon juice, fresh.
  • 1 tsp. sherry wine.
  • 2 tsp. salt.
  • 1/4tsp. white pepper.
  • 1 tsp. dried basil.
  • 1cup stuffed pimento olive, minced.
  • 1/4Cup sour sauce.
  • 1 tsp. potato starch.
  • 1/4Cupfontinella grated cheese.

Method

  1. Dust chicken breast with all-purpose flour.
  2. Heat oil in a pressure cooker and add the chicken breasts two at a time, cook until they turn brown. When all are cooked set them aside.
  3. Add all the other ingredients (except sauce, potato starch and cheese) into the pressure cooker and stir to mix well, add the chicken breasts. Cover and cook on high pressure for 10 minutes.
  4. Put the chicken in serving dish and cover to retain heat.
  5. In a separate bowl mix the sour sauce and potato starch together. Mix in the pressure cooker, cover and cook for 2 minutes.
  6. When serving, sprinkle chicken with cheese and spoon over the sauce. Remember to garnish with sliced lemon..

Boston Butt Recipe

Hot chips
  • Preparation time: 10 - 15 minutes.
  • Time to cook: 40 - 60 minutes.
  • Servings: 6 persons

Ingredients

  • 2lbs Boston butt.
  • 2 tsp. house seasoning.
  • 1 tsp. seasoning salt.
  • 1/2tsp. paprika.
  • 2 tsp. soy sauce.
  • 1 bulb onion, sliced.
  • 5/4 cup water.
  • 1 chicken bouillon cube.
  • Pepper and salt, to taste.

Method

  1. Mix house seasoning and seasoned salt, add paprika and soy sauce and stir to mix well.
  2. Rub the mixture over roast and place in a zip lock bag. Refrigerate for 24hrs.
  3. In a pressure cooker, place the sliced onion. Top with water and the bouillon cube.
  4. Place the roast on top and cover the cooker. Cook on high pressure for 40 minutes.
  5. Add pepper and salt to taste, before serving..

Pressure Cook Beef On Rice

Hot chips
  • Preparation time: 10 - 15 minutes.
  • Time to cook: 45 - 60 minutes.
  • Servings: 6 persons

Ingredients

  • 2lbs sirloin steak, cubed.
  • 3 tsp. all-purpose flour.
  • 2 tsp. salt.
  • 1/2tsp. black pepper.
  • 1/2tsp. paprika.
  • 1/4tsp. mustard powder.
  • 2 tsp. vegetable oil.
  • 2 onions, chopped.
  • 2 minced garlic cloves.
  • 10.5oz can beef consommé.
  • 4 cups rice, cooked.

Method

  1. Place all the ingredients (except garlic, onions, consommé and rice) in a mixing bag. Shake to ensure the meat is well-rubbed with the mixture. Brown the meat in vegetable oil in the pressure cooker.
  2. Add chopped onion and garlic. Ensure you completely sauté the onions till they turn translucent. Add the consommé and stir to mix well.
  3. Cover the cooker and cook on high pressure for 25 minutes. Release pressure and simmer your beef to proper consistency.
  4. Serve with cooked rice..

Pressure Cooker Dessert Mashed Sweet Potatoes

  • Preparation time: 5 - 8 minutes.

Ingredients

  • 3lbs sweet potatoes, peeled and sliced into 2 inch pieces.
  • 2 garlic cloves.
  • 1 tsp. salt.
  • 1 /4tsp. black pepper.
  • 1/2tsp. dried parsley.
  • 1/4tsp. dried sage.
  • 1/2tsp. dried rosemary.
  • 1/2tsp. dried thyme.
  • 1/4Cup milk.
  • 2 tsp. butter.
  • 1/2Cup parmesan cheese, grated.

Method

  1. Place the sweet potatoes on trivet in the bottom of the pressure cooker.
  2. Add 2 cups of water and cook on high pressure for 9 minutes.
  3. Release the pressure and drain all the water.
  4. Put the potatoes and garlic in a masher and whip till they mix well.
  5. Add all the remaining ingredient and stir till they mix perfectly.
  6. Serve warm.

Creamy Pressure Cooker Pudding

  • Time to cook: 30 - 55 minutes.

Ingredients

  • 3/2 cup long grain rice.
  • 3/4Cup sugar.
  • 1/2 tsp salt.
  • 5 cups whole milk.
  • 2 eggs, beaten.
  • 1 cup half & half.
  • 3/2tsp. vanilla extract.
  • 1 cup raisins.

Method

  1. Add rice, sugar, salt and milk in a pressure cooker. Sauté till they boil and stir to ensure the sugar is completely dissolved. Cover and cook on low pressure for about 16 minutes.
  2. In a separate bowl mix eggs, half & half and vanilla.
  3. After 10 minutes of the beep, release pressure, remove lid. Add the egg mixture to the cooker and stir gently. Cook uncovered for some minutes.
  4. Turn off the cooker, stir in raisins before serving.
